Olive wood is special. Not only is it resistant to decay but has been cultivated since around 3000 BC. Trees grow to nearly 40 feet in some regions of the Mediterranean, but in Israel (Holy Land) they are closer to 10-15 feet in height. The olive tree has small white blooms which arrive in Spring; the harvesting of olive fruit happens in the Fall season. They do not bloom every year, and often the abundant harvest of one year will be followed by a non-producing year. The trees start bearing in 4 to 8 years, but full production is not reached for 15 or 20 years.
